Chives are about as low-maintenance as it gets. They grow effortlessly in pots or garden beds, thrive during the summer months and require little more than occasional watering and trimming.

Snip what you need and they’ll keep growing back…making them a reliable, fresh ingredient all season long.

Harvest and preserve as much as you can for the winter months ahead. During these winter months, I made a lot of homemade chicken stock with chicken thighs.

My dad used to take the cooked meat from those thighs so full of flavor marinating in the chicken stock and make chicken salad from the meat.

This refreshing, creamy chicken salad sandwich is light, flavorful, and perfect for warm days which is proof that simple ingredients and fresh herbs make all the difference.

Once the chicken thighs are cooked, it only takes a few minutes to make the chicken salad with chives. You can use fresh chives or frozen chives in this recipe.

This creamy chicken salad with chives is the perfect way to use up leftover chicken after making broth with chicken thighs. The slow-simmered meat stays tender and flavorful, giving this salad a rich, juicy texture that’s never dry. Fresh chives add a bright, herby kick, making this an easy and delicious upgrade from your usual chicken salad.

Ingredients

  • 4 chicken thigh meat leftover from chicken soup, chopped finely

  • 1 tbsp mayonnaise

  • 1 tsp of chopped chives fresh or frozen

Directions

  • Pull apart chicken thigh meat after being cooked for chicken stock. Cut meat in small pieces. Add to mixing bowl.
  • Add 1 tbs of mayonnaise.
  • Add 1 tsp chopped chives fresh or frozen.
  • Mix together and refrigerate in an airtight container for at least an hour.

Notes

  • Chives will give the chicken salad a mild onion flavor. For more bold onion flavor, you can add chopped scallions instead. You can also add celery for crunch and flavor.
  • Eat by itself for a low carb diet or in a bun.
